What is Xylooligosaccharide?
Xylooligosaccharides (XOS) occur as a white or pale-yellow powder, or as a clear, yellow, viscous liquid. XOS are a mixture of water-soluble, nondigestible oligosaccharides composed of 2–9 molecules, mainly xylose linked with β-1,4-glycosidic bonds. The commercial products contain small amounts of non-xylose monosaccharides, namely glucose and arabinose, bonded on the XOS structures and as mono- and di-saccharides such as glucose, xylose, arabinose, fructose, cellobiose, and sucrose. XOS are produced from xylan-rich, lignocellulosic materials (e.g., corncobs, sugarcanes) by extraction, enzymatic hydrolysis, separation, purification, concentration, and drying to produce the ingredients of commerce.
The sweetness of XOS with a purity of 50% is 30% of that of sucrose. It has the lowest viscosity compared to other oligosaccharides. Compared to sucrose, XOS, as one of best prebiotics of oligosaccharide type, has weaker coloring properties. But add it to baked goods for a strong aroma. It has a low calorific value. Its average calorific value is 3.4 kcal/g. At the same time, it has good frost resistance. Even if it is stored at -10℃, it is not easy to freeze. On the market, XOS are often added to beverages, dairy products, or health products.
